You are kind of a big deal! Yes, you! I read those words recently and it happened to be just what I needed to hear at that moment. It is so easy to get caught up in the daily grind and forget to take care of yourself. You are so important to those around you. You are a friend, a sister, a brother, an auntie or an uncle, a son or a daughter. You might be someone’s spouse or even a parent. You are part of a team at work, even if you are self employed or stay at home taking care of loved ones. You are important and how you take care of yourself matters! Coming from the holistic nutrition approach, taking care of you encompasses the food we are eating, the products we use on our skin & clothing, the air we breathe and our mental & spiritual wellbeing. You are a whole package and each part of you deserves attention. Hopefully this doesn’t sound too overwhelming to you and it instead gives you the permission to do something nice for yourself, no matter how small or grand the gesture. Read a book, drink a cup of hot tea, go to the driving range, eat something great, spend some time with God, call a friend or go to bed early. In case you choose to eat something great, I just happen to have a special recipe for you! It can get a little humdrum when planning meals during the last few weeks of a long winter. This recipe is sure to wake up those taste buds and remind you of the fresh tastes of that are on their way!
This recipe is from one of my most favourite childhood friends. She was the kind of friend that I could tell my secrets to. We stayed up late talking on the phone just to see each other a few hours later at school. We spent weeks up at her cottage in the summer having fun and talking about boys. We grew up and now live in different cities. She made this chicken for my husband and I years ago and I loved it. I’ve tweaked it ever so slightly and want to share it with you. Lesley’s Lime Chicken
1 tbsp. coconut oil
2 chicken breasts, cubed
1 tsp. Sea salt
1 clove garlic, minced
1 tsp. Thyme
1 tsp. Paprika
½ c. organic veggie broth or homemade chicken stock
Juice from 1 lime
Melt oil in a frying pan. I really like using my cast iron skillet for these type of dishes. Add the salt, thyme, paprika and coat the chicken. Once the chicken is nearly cooked, add the garlic and finish cooking. Now add the broth and the juice of 1 lime. Serve with brown rice and a nice fresh garden salad.
