Subtle yet flavourful is the best way to describe this rice. Pair it will a little grilled chicken, feta cheese and a Greek salad and you've got yourself one tasty meal!
Rinse and set aside rice. Saute onion in a drizzle of olive oil over medium heat. Once onion is nearly translucent, add garlic. Next add juice from half the lemon. Add rice and fry until slightly brown. Pour in broth and cook rice until liquid is absorbed. Squeeze the rest of the lemon juice into the rice and stir. Top with feta cheese if you wish. Enjoy!
