Quick and easy and so worth the effort! Take oatmeal to a whole new level with my baked oatmeal recipe. Make this breakfast complete by serving with plain Greek yogurt for a great source of protein.
Preheat oven to 375°F. Grease 9"x 13" baking dish with butter if necessary. In a small mixing bowl, combine oats, flour, flax seeds, maple syrup & melted oil.
Pop blueberries into baking dish. Sprinkle with cinnamon to taste. Spread oat mixture over blueberries and bake for about 40 minutes.
Make this breakfast complete by serving it with plain Greek yogurt.

This recipe is so easy and works well with all kinds of berries or peaches (2-3 cups fresh or 1 whole bag frozen), rhubarb & blueberries, raspberries & pear or straight up apple (6-8 apples sliced & cored - leave the peels on for extra vitamins & fibre.) If you are a big fan of the oat topping, try doubling the crumble mixture.
