
Rhubarb and Apple Crisp

Rhubarb has a rather distinct flavour. I like to round out its tart personality with some apples and strawberries. What I ended up with was sheer happiness for your taste buds!

Ingredients
- 3-4 medium apples peeled & roughly chopped
- 1 cup strawberries sliced
- 2 stalks rhubarb sliced
- 2 cups oatmeal old fashioned or quick cooking
- 1 cup raw or coconut sugar
- 2/3 cup light spelt flour
- 2/3 cup coconut oil or butter melted
- 1/2 tsp sea salt
Instructions
- Preheat oven to 375 F. Place fruit in the bottom of a 9" x 13" baking dish. Mix the rest of the ingredients in a separate bowl and then spread over fruit. Bake for about 40 minutes. Allow crisp to cool slightly before serving. Enjoy!
