Spring is definitely in the air. To help us all celebrate, I would like to introduce you to my favourite refreshing cold beverage. With far less sugar than typical ginger ale, as well the added benefits of real ginger, lemon and honey, this bubbly drink will add a little zip to your glass.
Homemade Lemon Ginger Soda Syrup
100 g ginger root, peeled & sliced into coins
3/4 c raw sugar or 2/3 c local, unpasteurized honey
1 c water
mint leaves, for garnish
Wash & peel ginger root. Slice into coins and add to small saucepan. Wash both lemons and remove the peel from one and place into pan. Squeeze the lemon juice into the pan. Add water and sugar as well. Bring pan to a gentle boil and stir gently until sugar is dissolved. Once sugar is dissolved, remove from heat and allow the ginger and lemon to steep in the pan for about an hour.
Once cooled, pour contents of pan into a jar through a fine mesh sieve to just get the liquid from the pan. Store in the fridge until you are ready to use. The soda syrup will last for about a week in the fridge.
I like to use about 1 tablespoon of syrup to about one cup of sparkling water, but adjust to your taste. Garnish with mint leaves & an extra lemon wedge for an added special touch.
