  • 1 tbsp coconut oil
  • 2 chicken breasts cubed
  • 1 tsp sea salt
  • 1 clove garlic minced
  • 1 tsp thyme
  • 1 tsp paprika
  • 1/2 cup organic chicken broth low sodium
  • 1 lime squeezed


  • Melt oil in a frying pan. I really like using my cast iron skillet for these type of dishes. Add the salt, thyme, paprika and coat the chicken. Once the chicken is nearly cooked, add the garlic and finish cooking. Now add the broth and the juice of 1 lime. Serve with brown rice and a nice fresh garden salad.
