There simply is nothing like a bowl of fresh salsa. This simple recipe highlights the fresh flavours of the season while getting extra points for being quick & easy. When I make this salsa, the bowl nearly gets licked clean!

Fresh Salsafresh salsa

1 large tomato or about 30 cherry tomatoes
1 pepper – orange, yellow or green
1 small sweet onion
1 lime
sea salt to taste
a few dashes or cayenne pepper or a small jalapeno pepper if you are feeling adventurous
1/4 c fresh cilantro, chopped

Mix all ingredients in a small bowl. Allow flavours to blend for about 30 minutes before enjoying with tacos, nacho chips or as a tasty addition to scrambled eggs. It will keep for 1-2 days in the fridge.
