I really like chocolate chips cookies…all gooey and fresh from the oven. As is often the case in my kitchen, I take a recipe and try to make it healthier. Now I am fully aware that many people have come up with excellent recipes for cookies that will be, ‘healthier,’ than the one I am about to share with you, BUT, this is my celebratory blog post and I get to share what I will. I also want you to like my post and not get frightened off by something that sounds too strange and bizarre to be a cookie, so here goes…

Chocolate Chip Cookie
Servings: 36 servings

This is your classic ooey, gooey chocolate chip cookie that grandma would have baked.

Ingredients
- 2 each eggs preferable free range
- 1 cup organic butter unsalted
- 1/2 cup raw sugar
- 1/2 cup brown sugar
- 1 tsp real vanilla
- 2.5 cup light spelt flour
- 1/4 c flax seeds ground
- 1 tsp baking soda
- 1/2 tsp sea salt
- 1.5 cups dark chocolate chips
Instructions
- Preheat oven to 350 F. Cream together eggs, butter, sugar & vanilla. Combine dry ingredients except for chocolate chips. Add dry ingredients to butter mixture. Once well combined, add chocolate chips. Bake for 8 to 10 minutes on a cookie sheet.
Notes
Sometimes I will roll out balls of cookie dough and freeze them – that way, I have a quick and easy treat to pull out of the freezer and bake up later.
