This weekend we have the privilege to acknowledge and appreciate the many ways those who are older and wiser have built into our lives.

Not surprisingly, some of my fondest memories with my grandparents revolve around food. My grandma made the best tomato noodle soup with the cutest little meatballs. My grandpa taught me to appreciate really good cheese. It is amazing how food memories can transport us to a different place and time in our lives.Celebrating Grandparents

Make a batch of these yummy squares to enjoy with those who care for you like a grandparent. While you are enjoying a tasty treat, spend some time reminiscing about your shared history.

Yummy Date Squares

2.5 c dates
2 c rolled oats
1/2 c ground flax
1/3 c spelt flour
1/2 tsp cinnamon
5 tbsp maple syrup
3/4 c coconut oil, melted
1/2 tsp vanilla
1/4 tsp sea salt
1/4 c pecan pieces

Preheat oven to 350°F. Soak dates with 1/2 c boiling water. I place the dates and water into my mini food processor and let it sit for about 10 minutes.

Combine the first 6 ingredients in a bowl and stir until evenly mixed. Place half of the mixture into a greased 8″ x 8″ baking dish.

Add vanilla & salt to the dates and water. Blend. Add more water if needed to achieve the right consistency. You want it to easily spread on the first layer of the oat mixture without being too runny. Spread carefully on top of first oat layer. Now add the remaining oats and sprinkle with pecans. Bake for 35 minutes.
